Well, because life is so much simpler when you know what you are cooking each day in advance; it eliminates a lot of waste and, after last week's 'I am skint so will be relying on reduced/special offers and therefore cannot plan' plan, I can honestly say it really does save you money!
Yes, I did indeed end up spending MORE last week by not planning ahead. Part of this was due to us acquiring a new cat and having to buy food and cat litter on top of everything else, but mainly the over spend was due to impulse buying and 'ooo I really fancy that for tea tonight...' type moments.
SO...
Back to proper planning this week!
This weeks menu won't require many extra purchases as I will be using rice, potatoes and a large tin of pink salmon from the store cupboard; leeks (for soup), fish portions and Sweet & Sour chicken from the freezer. This means I can concentrate on spending my money on fresh veg and herbs and get some good mince from our butcher.

Homemade Vegetable Soup
with cheesy stars and bread rolls
Tuesday
Salmon fishcakes & potato wedges
Wednesday
Salmon and cream cheese 'pate'

with rustic bread

Sweet & Sour Chicken (from freezer)
and rice
Mmm sounds yum. Can we come yours for tea? As my boyf always says, 'Failing to plan, is planning to fail'. He's right obviously but sometimes life does get in the way : )
